Six of the best drink pairings for kale

Although there's not quite the feverish frenzy there was about kale a couple of years ago there's still a lot of kale lurve around.

The reason of course is its well-documented health benefits which might suggest you shouldn’t be drinking alcohol with it at all but there are many dishes containing kale with which it would be pleasant to have a drink.

With its slightly bitter taste kale also has an impact on wine when it's served as a vegetable: it’ll tend to make any wine taste sweeter so you may want to serve it with both reds and whites that have a good level of acidity. That effect can be counteracted though if you serve it with something like chorizo that has a stronger flavour. Then you should match the chorizo rather than the kale

* Apple-flavoured drinks especially apple juice and cider work well with salads that include kale such as this one. Or try a grüner veltliner.

* Fresh carrot and beet-based juices

* Italian white wines such as Gavi are good with creamy pasta dishes with cavolo nero

* Fresh-tasting natural reds such as young syrah and mencia from Spain’s Bierzo region are good with hearty stews and soups that are based on kale. If they include a spicy sausage like chorizo you could serve a fuller bodied red like a Rioja crianza or a red from Portugal’s Alentejo region.

*Tuscan reds like Chianti work well when kale is used as an accompaniment for lamb or game with polenta

* Give kale an oriental spin with soy or sesame and you could drink a sake

Six of the best pairings for a burger

It might surprise you to hear it - and maybe you’ve never tried it - but a serious red wine is a really good match for a burger. Not a Maccy D, maybe but a big lush gourmet burger. And why not?

Agreed it's not quite as simple as steak. Obviously the more ingredients you add the more a wine can struggle. Burger sauces and ketchup are the main culprits. They both have a sweetness that can strip the fruit out of lighter, drier reds so stick to riper wines. Raw onions and strong pickles like kimchi also present a challenge so steer clear of those if you're drinking something special.

Here are my six favourite wine (and other) pairings

Cabernet sauvignon, merlot and blends of the two

Cabernet is probably my favourite burger wine especially with cheeseburgers (burgers with blue cheese in particular) but merlot runs it a close second. That obviously means that Bordeaux and Bordeaux blends work too though I’d suggest only once they hit a certain level of alcohol. A light 12.5% claret may struggle

Modern Tuscan reds

You might not be able to run to a Tignanello or Sassacaia but lesser modern Tuscan reds such as those from Bolgheri and Maremma have the ripeness and lushness to complement a burger. (And see this surprisingly good match for a Shake Shack burger!)

Other full-bodied reds like Grenache, Malbec, Shiraz and Zinfandel

You’ve probably got the drift by now: big reds work with burgers so include grenache, malbec (a burger is after all, only chopped steak), shiraz and cabernet-shiraz blends and zinfandel among your options.

IPAs and double IPAs

If there isn’t a better occasion to crack open a hoppy IPA I don’t know what is. (Well, maybe pulled pork but that’s another story ….) Rich amber ales also work well if you find craft IPAs a bit sweet. (I was drinking one only last night!)

A Manhattan

You should really try this! The sweet/strong combination of whiskey, sweet vermouth and bitters is just perfect with a gourmet burger.

Milkshakes

How could I leave out a gorgeous creamy ice-cold milkshake? Not that strawberry or chocolate is really a good match for beef but who cares? Ultimate comfort drinking!

Generally of course dal wouldn’t be eaten on its own but with a curry or a biryani but given it makes a pretty good midweek dish on its own or with rice you might fancy a glass with it. Here are some options

Cider

I mean, come on, this is Bristol. Let’s celebrate our regional drink. Besides it goes REALLY well with gently spiced food like dal

Lager

I’m not thinking of Kingfisher more like a good craft lager like Lost & Grounded’s Keller pils.

Sylvaner

Not as well known as Alsace’s other grape varieties such as riesling and gewürztraminer but I really like its refreshingly fruity character with a dal

Dry rosé

Rosé works surprisingly well with Indian food. I’d personally choose a dry-ish style from Provence or elsewhere in the south of France

A virgin mojito

And other lime-based drinks. Even a Rose’s lime cordial!

Salted lassi

Or mango lassi if you prefer but I like salted with dal. There’s a nice recipe here.

Coconut water

Not a huge fan myself but it would definitely work. My local Indian restaurant, Thali does a Arrack Sour cocktail with Ceylon arrack shaken with coconut water, lime and egg white which would totally hit the spot.

Cold brew tea

I was going to suggest chai but I think cold brew tea would be even nicer. There’s a useful guide on brewing up on the Samovar tea website

If you’re on the wagon this month, mealtimes can suddenly seem a bit drab and colourless. But if you’re missing the taste of your favourite wine try substituting a fruit juice that has similar flavours.

Obviously they tend to be sweeter than wine which may or may not be to your taste. They also, tend to be thicker in consistency, particularly if they’re home made, which can overwhelm a delicate dish. But you can deal with that either by adding a little still or sparkling mineral water, a dash of lemon, lime or grapefruit juice or by serving your juice in a jugful of ice.

If you want a lighter style of juice choose or make one that’s blended with apple, pear, grape or melon juice which will give you a softer, more rounded flavour.

Here’s what to try instead of your favourite sips:

Lighter styles of Chardonnay/Chenin Blanc: apple or pear juice, white cranberry juice

Richer styles of Chardonnay: peach, mango, passionfruit or tropical fruit juice

Semillon: pineapple juice, tropical fruit juice

Sauvignon Blanc: elderflower cordial, traditional lemonade

Riesling: white grape juice, lime cordial, sparkling apple juice

Rosé and light reds such as Beaujolais: cranberry juice, red grape juice, strawberry cordial, watermelon juice

Pinot Noir: pomegranate, raspberry or raspberry and cranberry juice

Merlot, Carmenère and Shiraz: forest fruits, plum juice

Cabernet Sauvignon: blackcurrant juice/cordial, blackberry, elderberry

Champagne/sparkling wine - elderflower spritzer, sparkling apple juice

Judging by my Instagram feed practically everyone is eating avocado toast at least once a day but what do you drink with it?

If you’re not on Instagram - or one of the 10 million people who has apparently searched for avocado toast on Google* - you may even wonder what it is.

Smashed up avocado on toast - or bread. That’s it.

Well, more or less. There are all sorts of fancy variations but purists like to keep it simple

Fans are as likely to have it for breakfast as they are for lunch or supper so my six pairings include 3 non-alcoholic drinks:

Green tea
Not just a colour thing, the slight herbiness of green tea is great with avocado. Better than coffee IMHO. By the way don’t make it with boiling water - that’s why it tastes bitter.

Homemade lemonade or - if you haven’t got time to make it - lemon and lime Juicy Water. Citrus and avocado is a no-brainer

A Virgin Mary (in other words a Bloody Mary without booze)
Tomatoes and avo are also great. This looks a good recipe

Witbier
A well-chilled Belgian-style wheat beer served with a slice of lemon. Much more interesting than lager.

Sauvignon Blanc
Definitely the wine that comes to mind. Great with guac - equally good with avocado toast.

A classic margarita
If you want to pay tribute to avocado’s Mexican origins there can be no better cocktail. Do make it with fresh lime though rather than a Margarita mix

*twice as many as fried chicken, would you believe?
